Butternut Squash Soup

1 butternut squash, chopped

1 onion, chopped

2 medium-sized potatoes peeled and diced

1 large carrot peeled and diced

4 cloves garlic, crushed

4 cups chicken or vegetable stock

2 chicken bullion cubes

salt & pepper to taste

1/2 cup heavy cream

pepitas for topping (optional)


  1. Place all ingredients except the cream into a large pot. Bring to a simmer over medium heat until all the vegetables are tender.

  2. Take off heat, blend using a stick blender.

  3. Add the cream and stir (do not boil after adding cream).

  4. Add your favorite toppings and enjoy!
